Just another day in the Season

Got up and started in on the Roast Beast for the Progressive Dinner. I got an 18-pound standing rib roast, untrimmed, at a good price. I trimmed 2 lbs. of fat off it, so that left a huge, 16-lb. roast. collinsmom put it in the oven while I was at dress rehearsal for tomorrow's cantata this morning.

After rehearsal, we got down on last-minute cleaning and decorating. The tree is finally up, the downtairs is clean, we were ready for company. I also prepped veggies while collinsmom did some final shopping.

The roast beast baked for four and a half hours. I took it out when it hit 155 degrees internal temp, wrapped it in foil, and put it in a cooler. Then, I cranked up the oven to roast the mixture of potatoes, baby carrots, and pearl onions we were serving.

The Progressive Dinner kicked off at Doug & Shawna's with appetizers (and the Army-Navy game). Then, we went over to Rich & Laurie's for soup and salad. Main Course was our turn. We served roast beast with horseradish cheese, roast veggies, Hawaiian rolls, broccoli & cauliflower. I finally got to serve my cat-poo coffee (it was okay, but not worth the price I paid for it). And then it was off to Mike & Debbie's for desesrts and singing Christmas songs around the piano. Altogether, a very good evening.

We are home now and enjoying our cleaned-up house. We're all done in.
