Let's hear it for horseradish!

Munched my way through one of my favorite snacks this evening: ring bologna and horseradish cheese. Yumm. We were watching Food Network at the time, and it made me think about how even the Very Important Chefs tend to run after fads. Currently, Tex-Mex spice is the hot thing (forgive the pun) -- you know, Serrano chilis, chipotle this-and-that, red pepper flake, yada yada yada.

Well, I think horseradish is divine. It's a different way to get heat (and aromatic goodness to wake up your sinuses). It ought to be a Secret Ingredient on Iron Chef America. Horseradish forever!
