Using up the leftover turkey

So, the big day has come and gone, and all the fam has gone home, leaving you with a huge amount of roast turkey. What to do? Well. here's a refreshing something you can make that will use it all up. Feel free to adjust the quantities up or down, depending on the amount of poultry you have on your hands.

Art's Turkey Salad

around 5.5 lb. of turkey breast or other deli poultry, cubed fine*
2 small pkg. dried cranberries
1 bunch green onions, chopped (whites and greens)
4-5 ribs of celery, chopped to the size of the turkey chunks
1 sm. pkg. of fresh dill, chopped fine
3 cups or so of mayonnaise (just enough to coat, not enough to be sludgy)
around 3-4 Tbsp Dijon mustard
salt & pepper to taste

Mix to combine, chill in fridge for a while before serving.


*One entire side breast of a big ol' Thankgiving turkey is about 5 lb or so. (I originally made this recipe up to match a whole smoked turkey breast I bought at the deli counter. I later made it from fresh roasted turkey, and it was even better.) You can add dark meat if you like. The object is to use up leftover turkey.
