Cooking is part art, part science. Developing a new dish is almost all art, as you feel your way to a conclusion. But the test of this art, as of science, is, can you repeat your results?

After developing a new soda bread recipe that gave me great delight, I wrote down the recipe. I then made a second batch according to that exact recipe. It was good, but a little flat. In making another batch today, I suddenly realized that I'd left the salt out of the written recipe. That explains the flatness of the second batch.

So, while I am awaiting the latest batch that just went in the oven, here is the (corrected) recipe.
Arthur's Hearty Soda Bread

3 cups whole wheat flour
1/3 cup bran
1/3 cup flaxseed meal
1/3 cup rolled oats
1 1/2 tsp baking powder
1 tsp soda
1 tsp salt
1 Tbsp brown sugar
2 tsp sesame seeds
1 1/2 cup milk

Mix dry ingredients, stir in milk to make a light dough, form into a round, flat loaf (add more whole wheat flour if it's too wet) on a greased cookie sheet. Bake 35 minutes at 350 degrees. Cool on rack; cool completely before cutting.
