Great Pumpkin Alert

Well, I cut up a big ol' pumpkin tonight, and it's cooking on top of the stove. The seeds have been washed and set aside for roasting once collinsmom gets home this weekend. She also plans on making some pies for the Men's fish fry this Saturday. Life is good.

EDIT: Mission accomplished. Having cooked the pumpkin soft, I mashed it up with a potato masher and scooped it into ziploc bags -- 1.5 cups per bag, just enough for a pie recipe. One medium pumpkin yielded eight bags of pumpkin pie goodness.

For stryck and other interested parties: collinsmom's Ultimate Pumpkin Pie recipe -- than which there is no better.

1 1/2 cups cooked pumpkin*
1 cup rich milk**
1 cup sugar
1/4 tsp nutmeg
1/4 tsp cinnamon
2 eggs
1 tbsp butter***

Combine ingredients. Mix thoroughly. Pour into 9" pie shell. Bake at 425 degrees F for 45 minutes.

If you prefer, you can substitute squash or sweet potatoes for pumpkin.

* Never used canned pumpkin; it's an abomination.
** If using condensed milk, don't use the sweetened variety.
*** REAL butter, if you please.
