Basic Red Sauce
In a pot, put:
2 28-oz cans of unsalted tomatoes (I use 1 can of crushed, and 1 of diced);
2 medium onions, chopped;
4 cloves garlic, minced;
8 oz mushrooms, chopped (optional);
salt to taste;
basil, oregano, thyme to taste (be generous).
Simmer for as long as you can.
Makes about two quarts.
