Easy Apple Cake
3 good-sized apples (I used Fujis, I think)
1 cup brown sugar, packed
1 stick butter
2 Tbsp light corn syrup
1 Spice Cake box mix
(cake mix calls for 3 eggs, plus water and vegetable oil)
Peel and slice apples.
Make caramel by melting butter and brown sugar together. When fully melted, take off heat and stir in corn syrup.
Pour caramel in greased 9x13 sheet cake pan. Arrange apple slices to cover the bottom.
Combine cake mix ingredients and beat to make a batter. Pour over apples.
Bake according to box mix insructions, but be patient. The extra liquid in the apples will add to the baking time about 15 minutes. Check frequently with toothpick until you know it's done.
Turn pan over onto large platter and wait a little while for the caramel to drizzle over everything. Remove pan.
